I am Professor at the Department of Food Engineering at ITU. My research group has expertise in:
- valorization of agricultural and food production wastes and by-products to obtain value added components
- efficient novel extraction processes (ultrasound, microwave, enzyme-assisted, SC-CO2,..) for obtaining value-added components
-enhancing functional properties and stability of the ingredients through use of encapsulation techniques (electrospinning, coating and liposome production)
-production of functional food components by microbial fermentation and enzymatic conversions from agricultural and food wastes
-composition analysis
Our past research projects include novel extraction and recovery of lycopene from tomato waste, protein, polyphenols, polysaccharides, fiber and antioxidants from fruit, vegetable wastes and meals from oil processing. In addition, bioaccessibility of bioactive components and functionality, physicochemical, sensory properties and stability of the components are assessed in the food systems.
Within the context of this call, we can offer solutions regarding the use of innovative and sustainable techniques for the valorization of agricultural wastes, analysis of agro-foods.
